Part of the Desserts section in their cookbook, titled Horizons Cookbook: Meatless Gourmet Meals, this image has also been published on the cover of The Delaware County Daily Times "Holiday Eats" insert on 10/31/2007. The set up includes studio lights with daylight bulbs and one incandescent light to add some warmth. Live evergreen branches ('borrowed' from a tree in the restaurant's parking lot) add a festive holiday feel while black raspberries fill in as pine cones and a tiny tea candle twinkles in the background.

Playing up the "stacking" theme (with the shadow acting as an added layer), this Asian-inspired appetizer is part of the newest Horizons' cookbook, New Vegan Cuisine. It has also been included in a Chestnut Hill Local newspaper article (www.chestnuthilllocal.com/issues/2008.07.31/locallife3.html) on 07/31/2008. Presentation employs the magical number of three and a fairly shallow depth of field, with the first appetizer in clear focus. Diffused lighting from the sides with a 2:1 ratio (similar to people's faces) enhances the food's dimension.

Baba Ghanoush's main ingredient is eggplant, and what better way to serve it than with Mexican spices and herbs in a warmed tortilla. This up-close-and-personal image details all the ingredients (chopped eggplant, tomatoes, onions, jalapenos, cilantro), while the glistening lime and textured tortilla provide its backdrop. Lit from overhead, the repeating circle of the glass rim, lime slice and tortilla adds interest and harmony. This image can be found on page 75 of the Horizons: New Vegan Cuisine cookbook.

Shown on page 166 of the Horizons Cookbook: Meatless Gourmet Meals cookbook, this image uses diagonals to bring action into the frame. Not only do the moist chocolate cakes with peanut butter icing list to the right, so do the brown pottery bowls in the background, mocking this delectable treat. Keeping with a monotone color palette, we borrowed the chef's tropical shirt to add some interest to the background. Lit from the front with daylight bulbs, this dazzling dessert takes center stage, where it belongs.

The image's shallow depth of field allows the covered strawberries in the foreground to be the primary focus, while the virgin berries hang out informally in the background. The composition mimics a natural landscape formation. These little beauties reside on page 159 of Horizon's New Vegan Cuisine cookbook.
